Why I love this...
These are perfect for those moments when you just need a sweet treat, but don't want to fill your body with processed sugars and preservatives. Using only the natural sweetness of dates these moorish bites work well on their own or with a cup of tea/coffee as an afternoon treat. They're also higher in plant protein than your average, shop-bought snack and with only a handful of ingredients you can pronounce you know exactly what you are eating! Plus, they take less than 15 minutes to whip up and use minimal equipment so what's not to like?
Ingredients
9 Medjool dates, pitted
1/2 Cup Coconut flour
1/4 Cup Raw Cacao Powder
1.5 Tbsp (heaped) Coconut oil
1 Tsp Vanilla essence (optional)
Pinch of salt
Dash of warm water
2 Tbsp Unsweetened desiccated coconut (to cover the outside)
Equipment
Measuring cups: 1/2 and 1/4 (or just one and measure out with that)
Tablespoon
Small plate
Small bowl
Appliance: Blender, Fridge
Preparation
Put all ingredients except for the desiccated coconut in a blender. The coconut goes in the separate bowl.
Blend until smooth. It will look like wet sand at first and then turn into larger crumbs that are more paste-like. You might have to scrape down the sides between stages. This shouldn't take longer than 2 minutes.
Using a tablespoon, scoop out portions of the mix and roll into balls with your hand. Roll each in the coconut and then place on the plate.
Refrigerate for 12 hours or over night and then store in an airtight container. As much as I don't like plastic, I have found plastic sandwich bags to actually keep them best.
They should last 5-7 days. They don't go bad, just taste a little stale.
Top Tip: For a variation consider using just one tbsp of coconut oil and adding in a tbsp of peanut butter (preferably a healthy version without added sugar, oils and preservatives).
