Why I love this...
Bread is one of my favourite things in the world - both eating and making it. I find the repetitive motion of the kneading really therapeutic, but some days call for a quick loaf and soda bread is my go to. Problem: with many people nowadays being wheat or gluten intolerant the traditional wheat-based dough doesn’t work. So I set out to create an alternative that would be just as easy, quick, only uses ingredients you can find in your local shop and is still delicious! Best served slightly warm with salted butter 😋 (it also keeps for a couple of days and toasts well)
Ingredients
300g Wheat free brown bread flour*
200g Wheat free plain white flour*
1 tsp Baking soda
1.5 tsp Salt
2 tsp Brown sugar
500ml Low-fat plain yoghurt
1 Large egg

Equipment
Large mixing bowl
Spatula or wooden spoon
Teaspoon
Fork
Baking sheet
Baking/greaseproof paper
Scale (to measure your ingredients)
Appliances: Oven
Preparation
Heat the oven to 190º fan whilst making the dough. Cover the baking sheet with paper
In the large bowl, stir together the flours, baking soda, sugar and salt
Add yoghurt and then in the empty yoghurt pot beat the egg with the fork (yay - no extra bowl to wash up!)
Add the egg and stir well. It will remain a wet mix but will come together
Tip dough onto the baking sheet and form into a round shape (it should hold). If you like a crunchy crust quickly pull away with your fingers all over to create a textured surface
Bake for 50 mins, then cool on a rack
